Rewind to this past Saturday morning. I was walking downtown at the Greenville Saturday morning market, and had a conversation about how fun it would be to pick out some veggies and seafood to come up with a dish for dinner. Thai food was mentioned and we got a little crazy with our veggies, sauce, and presentation but hey, it was fun! This inspired me to come up with simple Thai curry to share with you guys today here on the Greenville 360 blog.
If you love Thai food but think it is hard to prepare, try this recipe. It is super simple, healthy, fast and delicious. I know you don’t have a lot of time to prep in the kitchen so I have even given you some ingredient shortcuts to shave off even more time. I’ve recently become so entranced in helping clients and readers find ways to prep easy meals in only 1 hour a week. I know how important time is to everyone, but I also know if you treat your body well –it will treat you well in return. So lets keep this simple.
Simple Thai Curry.
I know I am supposed to be starting my week in productive mode, but I can’t stop thinking about this curry that I had on Saturday night. We added habaneros, jalepenos from my garden, loads of fresh basil, fresh Carolina Shrimp and of course the pineapple!! Sometimes it is fun to take a night and make a date of it, really going all out gourmet, but since I can’t get this out of my mind, I started playing around with the recipe and how I could make it simple enough to be on one of my meal prep plans. Put this over rice, noodles, or even make it Paleo with this cauliflower rice from Trader Joes. You can add any seafood you like, and if you don’t like seafood, substitute for chicken. Simple Thai Curry
Serves 4
Prep time: 15 minutes
Cook time: 20 minutes
Ingredients
- 1 tbsp coconut oil
- 1 jar Trader Joes Green Curry Simmer Sauce
- chicken broth, as needed
- 1 medium onion
- 1 red bell pepper, cut into strips
- 1/2 bag frozen calamari
- 1/2 bag frozen shrimp
- 2 cups sugar snap peas, trimmed
- 1/2 cup fresh basil leaves
- 1 tbsp fresh lime juice
- cooked rice noodles
- lime wedge for serving
- salted cashews
Preparation
Heat oil in a medium pot over medium. Add onion and salt and cook, stirring, until onion is soft, about 3 minutes. Add bell pepper and stir to combine. Add 1 jar of Trader Joe’s Green Curry Simmer Sauce. Add Bring to a boil, then reduce heat to low and simmer until pepper is crisp-tender, about 3 minutes. Add chicken broth to thin the sauce if you need to. Add calamari and shrimp and snap peas. Cook over medium, being careful not to boil, until warmed through, about 5 minutes. Stir in basil and lime juice. Serve with rice or rice noodles, top with cashews, and lime wedges alongside.
